Study of Ageing and Damage in Pear Using Bio-Impedance Analysis
Abstract:
Bio impedance analysis is an emerging, fast, reliable and non destructive technique for fruit quality assessment. Bio impedance analysis has several advantages over conventional methods being low cost and non invasive with the possibility to correlate the physiological development of the fruit with changes in electrical parameters. This technique could be used to determine the freshness as well as quality of fruits using a non invasive methodology. In this work, bio impedance analysis measurements have been carried out to monitor aging and damage in Pear for a period of 23 days using Precision Impedance Analyser 6500B series. The data has been extracted in the 100 Hz to 2MHz frequency range and the resulting impedance spectra have been fitted with the Cole equivalent circuit. The four variables of the circuit, namely series and parallel resistance R1 and R2, constant phase element CPE magnitude and phase have been extracted from the model. The variations of extracted parameters with ripening have been analysed and discussed with relation to fruit physiology.
